2 oz Butter
1 tbs Olive oil
One Onion, peeled and finely chopped
Two Garlic Cloves, peeled and minced
1 ½ lb Zucchini, washed, trimmed and thinly sliced
3/4 cup Sour Cream
Small bunch Dill, washed, trimmed and finely chopped
Plenty Grated Parmesan or substitute
Heat the butter and oil in a large skillet over a low heat and cook the onions and garlic for about 10 minutes, add the zucchini and cook for a further five minutes. Stir in the sour cream and season to taste. Let this bubble up and add the dill. Remove from the heat. Meanwhile cook the pasta, drain well, then turn into the skillet and stir well to combine. Serve with the grated cheese.
