Luxurious Creamed Spinach

Directions

1. Steam the Spinach for 3 minutes, chop roughly. 
2. In a deep frying pan, melt 1tbs of butter with 1tbs Olive Oil, add the Red Onion and Garlic, sweat gently till soft. 
3. Add the cooked Spinach, raise the heat and bubble away any excess liquid
4. Lower the heat again and add ½ cup of cream, stir to heat through, season to taste with salt and pepper.
