3 - 4 Garlic Cloves, peeled and minced with a little salt
4oz Butter, softened
½ Lemon, juice only
1 Bunch Cabbage Raab, washed and well dried. 1 inch trimmed of stalk.
Turn the garlic paste into the soft butter and beat till well combined and smooth, adding the lemon juice. Preheat oven to 400. Arrange the raab on a baking tray, drizzle a little olive oil over top and toss. Roast for around 10 minutes, toss again and pop back for another 10 minutes or till tender and slightly crispy. Serve with dollops of the garlic butter melting on top. If you have more butter than you need, you can put a dollop on any of your prepared vegetables!
