Lemony Leeks with Feta


  • 1 ½ lb   Leeks, well washed, trim the coarser green off, then slice into 5cm slices.  Wash again in a colander.  (No matter how hard we try the earth always ends up going deep down into the folds)
  • 1 cup Vegetable or Chicken Stock
  • 400g can Chickpeas, drained and rinsed
  • 3oz Feta Cheese, crumbled
  • 2tbs Olive Oil
  • 1tsp Honey
  • One Lemon, juice and zest
  • One Garlic Clove, peeled and minced
  •  Salt and Pepper
  •  Your favorite herb – dill or chives would be good, washed and snipped


  1. In a large frying pan, heat the stock till it simmers, add the leeks then cover and simmer for around 5 minutes. 
  2. Combine the Olive Oil, Honey, Lemon Juice and Garlic by shaking together in a jar, season to taste with Salt and Pepper. 
  3. When the Leeks are tender, remove from the pan with a slotted spoon and arrange on a serving plate
  4. Add the chickpeas to the pan and heat for about a minute, tossing to warm through. 
  5. Take the pan off the heat, remove the chickpeas with a slotted spoon and sprinkle over top of the leeks. 
  6. Add the dressing and toss gently
  7. Sprinkle the Feta Cheese over the top along with the lemon zest and snipped herbs.
