One Bunch Kale, ribs removed, washed, drained and chopped
1 tbs Balsamic Vinegar

In a large skillet, heat 1 tbs Oil over medium-high heat. Add the Onion and a good pinch of salt, cook over a low heat, stirring occasionally, until the onions are golden brown and nearly caramelized — about 30-40 minutes. (If you don’t have the time, simply cook gently till softened).
Add the second tbs of oil and the Mushrooms, cook until the Mushrooms are golden brown, 5-10 minutes.
Add the Chickpeas, Kale, and cook until the Kale is wilted, 2-3 minutes.
Add a splash of balsamic vinegar to deglaze the pan and balance out the other flavors with its acidity.
Season to taste with additional salt and balsamic vinegar.
Garnish with parmesan shavings.
