Kale, Mushroom and Chick Pea Stir Fry

Ingredients

  • 2 tbs  Oil
  • One Small Red Onion, peeled and diced
  • 8oz Mushrooms, cleaned and sliced
  • One 15oz can chickpeas, drained and rinsed
  • One Bunch Kale, ribs removed, washed, drained and chopped
  • 1 tbs Balsamic Vinegar
  •  Hard Italian Style Che

Directions

  1. In a large skillet, heat 1 tbs Oil over medium-high heat. Add the Onion and a good pinch of salt, cook over a low heat, stirring occasionally, until the onions are golden brown and nearly caramelized — about 30-40 minutes. (If you don’t have the time, simply cook gently till softened). 
  2. Add the second tbs of oil and the Mushrooms, cook until the Mushrooms are golden brown, 5-10 minutes.
  3. Add the Chickpeas, Kale, and cook until the Kale is wilted, 2-3 minutes.
  4. Add a splash of balsamic vinegar to deglaze the pan and balance out the other flavors with its acidity.
  5. Season to taste with additional salt and balsamic vinegar.
  6. Garnish with parmesan shavings.
