Green Beans with piquant Salsa Verde

Ingredients

  • 1lb Beans, washed, topped and tailed
  • 1 Garlic Clove, peeled and minced
  • 1tbs Capers, rinsed
  • 2 – 3  Anchovy Fillets (optional)
  • One Bunch Parsley, washed and roughtly chopped
  • 1tbs  Red Wine Vinegar or Lemon Juice
  • 1tbs Olive Oil
  •  Salt and Pepper to taste

Directions

  1. Cook the beans in boiling water for about 5 minutes till just tender, drain. 
  2. While the beans are cooking, put the remaining ingredients in a food processor and pulse. You want a rough sauce, not a smooth paste, so don’t overdo it. 
  3. Taste and season with salt and pepper, adding a little more vinegar or lemon juice if you’d like. 
  4. Dress the hot beans and serve.
