Exotic Chard and Sweet Potato Stew


  • 2tbs Oil
  • One Large Onion, peeled and chopped
  • 1tsp Cumin Seeds
  • 1lb Sweet Potato, scrubbed and cut into bite sized chunks
  • ½ tsp Chilli Flakes (or to taste)
  • 398ml Can of Chopped Tomatoes
  • 2 cups Vegetable Stock
  • 5oz Salted, roasted Peanuts (or Cashews if you prefer)
  • Bunch Chard, washed, trimmed and roughly chopped
  • Salt and Pepper to taste


  1. Heat the oil in a large saucepan over medium heat. 
  2. Add the onion and fry till light golden. 
  3. Stir in the cumin seeds and cook till fragrant – about 1 minute
  4. Stir in the sweet potato, chilli flakes, tomatoes and stock.  Cover and bring to the boil.
  5. Uncover and simmer for 15 minutes. 
  6. Meanwhile pulse the peanuts in a food processor till finely ground, be careful not to let them turn to peanut butter. 
  7. Add to the stew, stir and season according to taste. 
  8. Simmer for another 15 minutes, stirring occasionally. 
  9. Finally stir in the chard, return to the boil and simmer, covered for around 10 minutes, till sweet potatoes are tender and chard is cooked.  Serve hot.
