Melt the butter in a large saucepan, add the onion, potato and garlic. Saute gently for around 5 minutes. Stir in the broccoli florets and stem. Add the stock and lemon juice. Bring to the boil. Cover and simmer for around 15 minutes till the vegetables are tender. Blend and add the milk if you'd like a thinner soup. Crumble in the cheese and season to taste. Reheat gently without bringing to the boil.
