One Savoy Cabbage, discard the outer leaves and finely shred, discarding the core
2 oz Butter
One Lemon, zest only
½ cup Vegetable or Chicken stock
Heat the butter in a large pan and grate in the lemon zest. Add the cabbage and cook over a medium heat till it begins to wilt and become glossy. Pour in the stock and cover with a lid, let it cook for another 5 minutes till tender but still with a crunch and bright green! Season to taste with salt and pepper.
