Bok Choy with Crimini Mushroom Sauce

Ingredients

  • 2tbs Oyster or Hoison Sauce
  • 1tbs  Soya Sauce
  • 2 tsp Sugar
  • 1tsp  Cornstarch
  • 1tbs Water
  • 12oz – 1lb   Bok Choy, trimmed, washed, drained and chopped into bite sized pieces
  • 3tbs Olive Oil
  • 1 tbs Garlic, peeled and minced
  • ½ Bunch Scallions, washed, trimmed and sliced
  • 8oz Crimini Mushrooms, cleaned and sliced.

Directions

  1. In a small bowl, mix together the Oyster Sauce, Soy Sauce and Sugar, stir in the starch and water to make a smooth paste. 
  2. Fill a pot with water, bring to the boil, add a pinch of salt and add the Bok Choy, cook for around two minutes till tender, shiny and bright green! 
  3. Drain well and set aside.  
  4. Heat the oil in a large skillet, then toss in the onion and saute for about a minute
  5. Add the Garlic and saute till fragrant (about 30 seconds)
  6. Stir in the Mushrooms and cook till tender and releasing moisture
  7. Add the sauce mixture and stir till thickened and coating the Mushrooms
  8. Turn in the Bok Choy and toss gently in the sauce till the Bok choy is coated and heated through. 
  9. Serve on rice.
